Our Dough

Slow-Risen. Roman-Crisp. Our dough rests for over 72 hours, just like in Rome. Light, digestible, and always baked to a perfect crunch. We use high-hydration dough (80%) that ferments slowly for over three days. This natural process gives the pizza its signature texture: airy inside, crispy outside. No shortcuts, no tricks — just time, technique, and tradition.
